I don't know what you have as far as valves. Plain jane trailers just have water heater bypass valves. Unless your has more, that may be another story. But usually when you have city water you just leave the pump off and use the city water.

You only need the water pump on when you don't have access to a city water supply. You want to make sure that you have plenty of water in the fresh tank.

You only need the water pump on when you are using water and NOT connected to the city supply. The city supply will not refill the water tank. Pex will hold alot of pressure. It's the quality of each hand crimped fitting and connector that will get you. Only one way to find out. I've never seen any water system capable of blowing thru the Pex, just the fittings that aren't quite crimped right.

I towed double with my 5'er. The laws in Tx says the first trailer has to have a 5th wheel hitch and have brakes.
